Cheat's Spelt Bread

The Best Spelt Bread I've ever tasted - great texture and nice and light!

Ingredients

300ml warm water

1.5 tsp active yeast

1 tsp salt

2tsp demerara sugar

2.5 tbsp olive oil

400g Shipton Mill white spelt

1 heaped tsp xanthan gum

You will also need a Bread Machine with a Rye Setting.  If you don't have a Rye setting, make sure you choose a setting that mixes for a minimum of time.

Method

  1. Pour the warm water into the bread pan and add the yeast.  Gently agitate the water to activate the yeast.  The water goes cloudy.
  2. Add the salt, sugar and oil.
  3. Now add the white spelt - you will get better results if you pour this in rather than spoon it in
  4. Add the xanthan gum
  5. Set the machine!
