A half and half white and wholemeal Canadian flour loaf
225g Canadian Strong White Bread Flour
225g Strong Canadian Blend Wholemeal Flour
300mls water
5g yeast
5g salt
20g sugar
20ml olive oil
Mix dry ingredients, then add water and oil. Knead 20 minutes (I use a bread machine to mix the dough - if you are hand mixing, you may want to make the dough stiffer by reducing the water to 270mls). Leave in a warm place to rise for one hour. Punch back. Put in a large (800g) greased loaf tin to rise until the loaf is above the rim. Bake in pre-heated oven for 30 mins at gas mark 5 or equivalent.
