Buckwheat Waffles (Gluten, Dairy and Sugar Free)

2 eggs (separate whites from yolks)

140ml soya milk

50ml sunflower oil

2 spoons of lemon juice

180g buckwheat flour

5g baking powder

one pinch of salt

Preparation:

Mix yolks, oil and lemon juice altogether.

In a different bowl mix all the dry ingredients: flour, baking powder and salt.

Add the liquid mixture to the dry ingredients gradually, stiring gently.

Whisk the whites until stiff and then add them in portions to the mixture.

Cook a quantity of one ladle in a frying pan with oil or in a waffle maker.
