Fluffy light spelt loaves, delicious with mayonnaise and dips
1 and 1/2 kilo white spelt flour
6 teaspoons salt
2oz fresh yeast
1/2 cup oil
2/3 cup sugar
approximately 2 cups water
pour flour in bowl, and make a well in the middle. dissolve yeast in luke warm water with 1 spoon of sugar. pour into the well, sprinkle the salt on the flour at the top of the well. when yeast starts to froth, add remaining ingredients slowly, leaving the water to the last, to see how much is needed. mix by hand first, as flour tends to stick, and add water slowly to get a thick not too sticky dough. leave to rise for 90 minutes, then braid, egg the top for a beautiful shine, and bake in preheated oven at 175 for 30-35minutes, till golden brown.
