A dense rich fruit (or fruit and nuts) cake for all celebrations: Christmas, Easter, birthdays, weddings or anytime because it is so tasty
This is very easy and quick to prepare and tastes delicious! Perfect with a dollop of plain yogurt or vanilla ice cream :-) The blueberries can be replaced by any other soft fruit of your choice.
Ingredients
3oz/85g butter
5.5oz/150g self raising flour
5.5 oz/150g sugar
220ml milk
6-8oz/170-225g blueberries (fresh or frozen)
1 tsp/5ml vanilla essence
1 tsp/5ml cinnamon + 1tsp/5ml of the sugar
Method
Set the oven at 350f/170c/150cfan/GM3.
Place the butter in a baking dish and pop it in the oven, so the butter melts as the oven warms up.
Mix together the flour, sugar, milk and vanilla essence in a bowl, with a hand whisk for about a minute to form a batter.
Remove the dish from the oven as soon as the butter has melted.
Pour the batter into the dish over the melted butter. DO NOT stir!
Scatter the fruit (fresh or frozen) over the top. DO NOT stir!
Sprinkle the top with the cinamon/sugar mix.
Bake for approx 40-50 mins.
