A soft and tasty spiced bread from Switzerland using the Swiss Dark flour (Ruchmehl in Switzerland). Translated from German from a webpage many years ago.

Ingredients

160g sugar
500g Swiss Dark flour
pinch of salt
15g vanilla sugar
200g honey
25 ml milk
1 large egg
1/2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cardamom
1/2 tsp ginger
15g baking powder

Method

Gently heat the honey, milk, sugar and salt in a pan and stir until clear. Then allow to cool in a bowl whilst continuing to stir. As soon as the mixture is lukewarm mix in the spices, the vanilla sugar and the egg. Gradually gently mix in the flour and the baking powder. Divide the dough into four balls and flatten each to a round shape 15-20 cm in diameter. Place the circles on baking parchment on a baking tray and brush with milk. Finally bake at 160oC for around 20 minutes.

Be careful not to use too much cardamom, which can mask the other spices.
