Apple and Sultana Scones

  • 600g plain flour
  • 80g Caster Sugar
  • 18g Baking Powder
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 5g salt
  • 120g Butter
  • 1 Large apple
  • 50g Sultanas
  • 2 Large Eggs
  • 284ml Buttermilk
  • 2 Teaspoons of Vanilla Extract

Preheat your fan oven to 170°C.

Mix together the sugar, baking powder, cinnamon, nutmeg, salt and flour in a bowl. Cut the butter into cubes and mix into the dry mix with your fingers until it looks like crumbs and then add the apple which should be chopped into small cubes and sultanas, finally adding the eggs, vanilla extract and buttermilk. Gently combine all the ingredients until the flour has been incorporated but avoid over mixing. Roll the mix out until its the same height as your cutter, then flour your cutter after each scone you cut out which helps to avoid sticking. Places the scones (approximately 10-12) on a baking tray spaced about two inches apart and brush them with an egg wash. Place in the centre of your oven for 15-20 minutes turning the tray around after half way to avoid them burning on one side. Allow to cool on a rack and serve with jam and cream
