Delicious vegan pancakes - they taste just like traditional pancakes made with egg and milk!
Easy, luxurious, taste sensation pancakes, little effort needed, prepare night before and cook in the morning for a warming winter breakfast. Add maple syrup and a dusting of icing sugar and its heaven.
ingredients
1/2 cup Sourdough Pancakes
1/2 cup whole wheat flour
1/2 cup plain flour
1 cup Buttermilk
1 tblspoon sugar
1 Egg
1/2 teaspoon salt
1/2 teaspoon baking soda
2 tablespooms melted butter
Method
Night Before
Combine flours and sugar with sourdough starter and buttermilk. Cover bowl and let sit at cool room tempreature overnight ( up to 12 hours)
Next Morning
Melt butter let it cool a bit and set asid, In a seperate bowl whisk together egg, salt and baking soda. Stir egg mixture into batter and combine well then stir in meted butter.
Drop by spoonful onto a mod hot griddle, thick ,thin, large or small, your choice. Cook until bubbly and edges drying out, flip and cook otherside.
makes about 8 average sized pancakes.

Hello - shouldn't that be "half a cup of Sourdough **Starter** as the first ingredient? (Not half a cup of "Sourdough Pancakes") Also is it necessary to use the baking powder? I wonder if the sourdough starter would produce enough bubbles. I might experiment with this.
