Ginger cake made with three types of ginger and a wonderful mix of dark treacle and golden syrup
Ingredients
225g of Shipton mill self raising flour
225g caster sugar
225g of soft un salted butter
2 apples ( of your choice) peeled, cored and diced
2 table spoons of golden syrup
2 tea spoon of ground cinnamon
1 tea spoon of mixed spice
1 tea spoon of nutmeg
4 free range eggs (corn fed chicken eggs are best)
Method
Cream butter & sugar together, adding eggs one and at time while mixing.
add golden syrup and diced apple
sift in flour and spices
mix well until batter is together
poor into a lined cake tin ( we use a round 9")
bake at 180 or 160 in fan oven for 15 minutes and check leave for a further 5 if required.
enjoy while still warm with cream. (this is one of our fav snacks at the mo)
