500g Strong Canadian Bread Flour

400g Water

10g Salt

 

5hr Levain Build

2hr Autolyse

4.5hr Bulk Ferment

3 x 15min Interval Stretch & Fold

3 x 30min Interval Stretch & Fold

14hr Overnight Retard
