Country Bread

Water 350 grams plus 25 grams

Leaven 100 grams

White Flour 450 grams

Whole Wheat Flour 50 grams

Salt 10 grams

This recipe is for one good loaf of bread.


Pour the water into a large bowl. Add the leaven and stir it t disperse. Add the white and wholewheat flour and mix it with your hands until you do not see any bits of dry flour. Then leave it to rest for 30 minutes. After the resting period, add the 25 grams of water and salt and squeeze the dough between your fingers. Then leave it to rest for another 30 minutes and mix again. You should keep giving the dough one turn every every 30 minutes for 3 hours. Always with your hands. Then put the dough in a hard surface for 30 minutes. after the bench rest, lightly flour the surface of the dough and put it in a basket or a medium bowl for the final rise. After 3-4 hours in room temperature you can put it in the oven for 20 minutes in a covered lid at 220 celsius and 20/25 minutes uncovering the top pan. This is the way to have a golden brown colour loaf. Enjoy!
