1 ½ cups mashed ripe banana (at least 2 bananas)
1/3 cup plain yogurt
5 tablespoons butter, melted
½ cup granulated sugar
½ cup packed brown sugar
1 ½ cup all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
1/8 teaspoon nutmeg
½ teaspoon ground cinnamon
Preheat the oven to 350 degrees F.
Combine the mashed bananas, yogurt, butter, and eggs in one bowl. Wisk away until they’re thoroughly combined! You can also use a mixer if your hand’s not strong enough, or you’re just feeling lazy that day.
Once mixed, add both sugars and continue mixing until it is all thoroughly combined. Sugar granules should not be visible.
In a separate bowl, mix together all the dry ingredients: flour, baking soda, salt, nutmeg, and cinnamon. Slowly add this mixture to your wet ingredients, until everything is incorporated with each other.
Slightly grease (with oil, butter, or cooking spray) a 9×5 inch loaf pan and pour your banana-crazy batter in. Bake for 55 minutes, and check to see if it’s ready by inserting a toothpick in its center and seeing if it comes out clean. Once done, remove and let cool until you can handle it; then remove the succulent bread and turn onto a wire rack to cool completely. YUM.
