Hot cross buns

An adaption of a famous cook's recipe that wasn't fruity or fragrant enough for me!

Ingredients

500g strong white bread flour
1 tsp salt
50g sugar
7g quick acting dry yeast
300ml milk
50g butter
1 egg
75g sultanas
75g raisins
100g mixed peel
1 apple or pear (chopped)
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger

Method

Mix the flour, salt, sugar and yeast in a bowl. Heat the milk until just boiling, add
the butter, then when cool add to the flour with the egg and mix it all together.

Knead for 5 minutes.

Put in the bowl for one hour to rise.

Add the remaining ingredients to the bowl and mix well. Knead again, split into
16 pieces and put on a greased tray. Leave to rise for another hour.

Mix some flour and water in a bowl until you have a thick liquid. Put into a piping
bag (or a washed-out baby food pouch works well!) and draw a cross onto the
buns.

Bake at 200°C for about 20 minutes until golden brown.
