Fool proof sourdough which is the basis for any loaf to then experiment with flavours
500g strong flour
mix together, leave for an hour.
stetch and fold every hour for 4 hrs. If adding anything, do at first fold.
cover and leave overnight on the counter.
next morning, take out of container and shape to your desired loaf. Place on parchment paper and leave to rest for 30 mins whilst oven warms.
hear oven on 240* for 30 mins
turn oven down NL place bread on parchment paper in a Dutch oven or other cooking sheet. Cover for first 25mins
remove lid and splash the top of the load with watercook for a Further 25mins
leave to cool and don't be tempted to cut until cold!
