Sourdough bread

Ingredients

200 gr Shipton Mill organic white
100 gr Shipton Mill wholemeal organic
100 gr Shipton Mill canadian white
100 gr Granary flour
350 ml beer (yes, sure its beer)
150 gr starter
1 tea spoon salt
1 spoon oil

Method

Mixing the beer and flours together and leave to autolyze 30-60 minutes. Add the starter, mix them and leave to 30 mins to stand. Kneading 5-7 mins. On middle of time took in the salt and endly the oil. Dough going to bowl, cover and leave 1 hour, after stretch and fold. Repeat this other twice, after the last fold leave at least 30 mins. Shape and took in benetton upside down. Wait still rise up ( 2-3 hours in room temperature). Bake it on 250 C in dutch oven with lid 15 mins, uncover and baked until ready on 200 C.
