Cinnamon rolls

For the dough

3/4 cup of warm milk

2 1/4 teaspoon dry yeast

1/4 cup granulated sugar

1 egg plus 1 yolk

1/4 cup melted butter

3 bread flour

3/4 teaspoon salt

For the filling

2/3 dark brown sugar

1 1/2 tablespoons ground cinnamon

1/4 cup soft butter


4oz cream cheese

3 tablespoons soft butter

3/4 cup icing sugar

1/2 teaspoon vanilla extract


Add yeast to w arm milk, leave for a few minutes. Add in sugar, egg, egg yolk and butter and mix well. Then add salt and and flour and combine then knead well for 8 minutes. Leave to rise until doubled in size. Roll out to a square shape about 1/2 centimeter thick and spread soft butter all over. Mix sugar and cinnamon together and sprinkle all over the butter. Roll quite tightly as this stops the butter running out when cooking and cut into desired thickness. Place on a baking tray lined with baking parchment leaving a gap between buns. Leave to rise once again then bake on middle shelf at 180 degrees for 25-30 mins until slightly golden brown on the edges. Remove and leave to cool in the tin. Once cooled mix the frosting and spread generously on the top, grab a cup of tea and enjoy!!
