Pizza Base


for approx. 4 people

• ½ tsp of yeast
• ½ tsp of sugar
• 130 g coarse semolina
• 170 g strong white flour
• 1 tsp salt
• 170 ml warm water (50-70C)
• extra semolina for rolling


1. Add yeast, sugar and warm water to a large bowl and leave for 5 min for the yeast to start bubbling.
2. Add salt and flour and stir to mix together. If you have a clean worktop empty the contents out and make a dough. Depending on the humidity of the room you may have to add more water or more semolina. Knead the dough for 5 min until you get a springy ball.
3. Put the dough into a clean bowl and cover with cling film and a towel. Leave for 30 – 90 min until the dough has roughly doubled in volume. This will depend on the temp and humidity in the room.
4. Pre-heat the oven at 210ºC and put in a flat baking tray that can accommodate the pizza.
5. Knock back the dough and remove 1/3 of the dough. Then re-seal with the cling film.
6. Form it into a ball and cover with coarse semolina. Roll it into a pizza shape that is approximately 5 mm thick. Use lots of semolina to stop it sticking to the worktop. Stab with a folk to stop it puffing up too much in the oven.
7. Take out the baking tray and put some semolina on it. Place the pizza on top then put it in the oven for 5 min until it starts to puff.
8. Remove from the oven and put on wire rack to cool. Repeat process for other dough.
9. On the pre-cooked bases add the pizza sauce and topping. The pizza will take between 5-10 min to cook.

Pizza sauce


for approx. 4 people

• ~600 ml of good quality passata
• ~4 anchovies (not too salty)
• 2 tbsp olive oil
• 3 cloves of garlic finely chopped
• Bunch of fresh oregano finely chopped
• 1 tbsp of dried oregano


1. Pour olive oil into sauce pan and heat on a gentle heat. Add the anchovies and fry until they have disintegrated.
2. Add the garlic to the pan and fry for 30 s
3. Add the oregano and fry for another minute.
4. Turn up the heat and add the passata. Simmer for 20-30 min
5. Once it has reduced down a little take off the heat and let cool. This can be added to pizza bases or used for a tomato sauce for pasta.



for approx. 4 people

• Mozzarella
• Jalapeno
• Cheddar
• Peperoni


1. Put the cool pizza sauce all over the base. Don’t use too much.
2. Grate or finely chop the Mozzarella all over the pizza.
3. Add some grated cheddar
4. Add the peperoni
5. Cook at 210C for ~10 min
