200g Strong Canadian White

200g Water (de-chlorinated)

Tablespoon of Sourdough starter

Mix together and leave for min 1 day max 2 days


Then add

400g strong Canadian White

200g Water (de-chlorinated)

10g Salt and any seeds/nuts you want


Mix together. wait 30 mins then fold four corners inwards every 30 mins for 3-6 hours. Leave to rise for 8-12hrs. turn out and fold again once or twice. Bench rest for 30 mins. Final fold and shape.

Leave to proof in warm oven for 2-4 hrs or until doubled in size.

Turn out onto baking tray or Colche in preheated oven at 220c for 20 mins. Then 240c for 20 mins.

Leave to cool on wire rack for minumum 2hrs......enjoy
