Pain de Mie

Ingredients

500g shipton mill organic white bread flour

20g organic fresh yeast

10g unsalted butter

10g salt

50ml whole milk

300ml water

butter for greasing tin

Method

Add all ingredients into breadmaker pan in the order from your manual, keeping salt away from yeast.

Set breadmaker to white dough setting.

When finished, remove and shape into loaf shape, if you have a Pullman own (pan with sliding lid) use that, otherwise use a standard loaf tin.

Leave to rise until almost double, about 1 hour.

Bake at 220°C for 25-30 minutes until golden brown and sounds hollow when tapped on bottom.
