Flours or other food products that are formulated without gluten. These products are becoming more popular as people with allergic reactions to the gluten, such as those suffering from Coeliac disease increase. Gluten-free grains include buckwheat, gram and rice.
However, in practice it is difficult to produce Gluten free flurs unless you have a dedicated facility. The levels of Gluten present must be below 20ppm. At Shipton Mill we sell our relevant flours as Wheatfree not Gluten free as we cannot garantee to get below the required levels.
