Can your organic ciabatta flour be used in bread machines? Would I just add water and oil?
The ciabatta flour will work well in the bread machine but it will still only produce an ordinary looking white loaf even if you add the olive oil to it.
A true Ciabatta will be produced using high percentages of well fermented dough with a water absorption of 80 to 90 %. The bread machines find it difficult to pick the dough up to develop it with this level of water.
