Irish Soda Bread

INGREDIENTS 
400g Irish soda coarse brown bread flour 
8g Salt 
12g Bicarbonate of soda 
280g Buttermilk (if this not available use 160g natural yoghurt diluted with 120ml water)


METHOD
1. Mix ingredients together really well using hands.
2. Turn dough out onto well-floured surface and bring together into a large round.
3. Divide dough into 800g/400g pieces.
4. Roll tops lightly in soda bread flour and place loaves onto floured baking tray.
5. Pat flat with palms to about 1" deep.
6. Cut a deep cross through loaves.
7. Bake at 180°C/350°F/Gas mark 4 for 35-40 minutes.

secret ingredient

i make soda bread a lot and have perfected an easy recipe that works every time. i add a good dash of vinegar and a small spoon of bicarb to the mix which seems to help if you can't get buttermilk. i also cook the mixture in a lightly greased saucepan with the lid on helps if the lid is a see through type and i bake it as a loaf cut across the top deeply too this ensures the loaf is cooked through to the middle before the outside is too rock hard. also wrap the loaf in a damp tea towel whilst it cools and it will be a lovely light loaf. i also very the loaf to add garlic or honey and fresh pulped oranges for a breakfast loaf.
