Orange, rum rasin and chocolate marble cake

Ingredients
- Four Eggs, two sets of two. Weighed, weight = W gms
- Preheat oven to 180 C
- Self raising flour
- Butter, soft at room temperature
- 40 gms cocoa powder
- 75 gms of raisins, soaked overnight in a good splash of dark rum
- Caster Sugar
- Grated rind of one orange
- Buttered and lined loaf pan
- Two mixing bowls
Method
- Into each bowl one put W gms of sugar and the same weight of soft butter.
- Cream the butter and sugar
- Beat in two of the eggs into each bowl.
- Mix the grated orange rind into Bowl one.
- Sift in W grams of flour into bowl one and fold into mixture.
- Cream the contents of bowl two, and beat in the two eggs.
- Mix in the rum soaked raisins into the mixture in bowl two.
- Sift in W minus 40 gms of flour with 40gms of cocoa powder and fold into the mixture in bowl two.
- You will now have two bowls of the mixture, Bowl one orange flavoured, Bowl two, choclate with raisins and rum.
- Spoon dollops of each mixture into the prepared pan alternating the withe mixture with the chocolate mixture. Then use a smll spoon to marble the oranged flvoured mixture through the chocolate mixture. Use you imagination.
- Bake in the oven, check at 20 mins, the cake will be cooked when a skewer come out clean.
- Rack and cool.
- Slice and enjoy with a cup of coffee.
