Soda Bread

Ingredients

360 g plain flour (strong white mixed with wholemeal)

3/4 teaspoon salt

3/4 teaspoon bicarbonate of soda

3/4 teaspoon cream of tartar

1 x 284 ml carton buttermilk

1 Tablespoon water

Preheat the oven to 220 C/425 F/ Gas 7

Flour a baking sheet (semolina best)

Sift all the dry ingredients into a mixing bowl and make a well in the centre Add the buttermilk and water and mix quickly to a soft dough.

Turn onto a floured surface and knead very briefly and lightly. Some uneveness will remain.

Shape the loaf into a round and place on the baking sheet.

Cut a deep cross on the tp of the loaf and sprinkle with a little flour.

Bake for 25-30 minutes. Serve warm.

Leftover slices and toasts well too!
