3 Grain Rye Bread

Ingredients
450g unbleached white flour
175g dark rye flour
75g oatmeal
30g linseed
15g caraway seed
2 tspns fermipan yeast
2 tspns sea salt
150ml full fat milk
300ml warm water
Method
Mix and knead all ingredients for 10 min. Prove for 1 - 2 h or until dough is doubled in size. Re- knead and form into an oval loaf. Slash down the centre with a knife, brush with beaten egg and sprinkle with caraway seeds. Bake for 40 min at gas mark 6.
