Any hints for making rye in a bread machine?

Do I need to make any changes to my Panasonic bread machine recipe for Rye bread - I'm using your 'light rye' flour?

Answer

I have never had any success with producing a 100% rye loaf on a bread machine as rye has no elasticity to it and the paddle cant pick it up to mix it.

I would suggest you use a proportion of rye to white flour say 25% of rye to 75% of white flour and you will still benefit from the flavours of the rye. You may still lose some volume but the texture will be better.

The rest should be the same but keep your eye on the water content as rye flour will have a higher water absorption.

Hi Clive! I was lucky enough to do a fantastic workshop with you, some time ago! But I have not had the same successes at home ,that I had under your watchful eye!You will highly disapprove, that I am now searching for a breadmaking machine that specialises in RYE bread! I do not want to have to add white flour. My Panosonic is the wrong model(SD 254)for rye. Surely such a machine exists in Germany!?If I find one I'll be brave and let you know!Any thoughts.......All best wishes Emma( friend of Nannette's)

Not sure if this will be approved of but what about adding some dought improver which one can buy. I use a wholemeal with grain add some rye flour and more grains of my own plus a very small amount of white strong flour i also add 2 teaspoons of dough improver and had a great loaf.

no paddle

try mixing the 100% rye dough by hand then place it in the bread machine without the paddle and rest? prove as normal... i have not tried this so good luck.:0)
