Any hints for making rye in a bread machine?

Question

Do I need to make any changes to my Panasonic bread machine recipe for Rye bread - I'm using your 'light rye' flour?

Answer

I have never had any success with producing a 100% rye loaf on a bread machine as rye has no elasticity to it and the paddle cant pick it up to mix it.

I would suggest you use a proportion of rye to white flour say 25% of rye to 75% of white flour and you will still benefit from the flavours of the rye. You may still lose some volume but the texture will be better.

The rest should be the same but keep your eye on the water content as rye flour will have a higher water absorption.
