What is your best chapati flour?

Question

Can you please help me choose the right flour for making chappties or nan bread ive tried 701 and 704 but they are too fine and I also tried 706 and 703 and its too corse. I need something in between. We did try to mix them but they don't come out right, so can help me with this one?

Answer

We do a product called dark Swiss and this is close to the medium chapati flour and then for the dark there would be the Organic stoneground  Canadian wholemeal.

We are currently developing a range of authentic chapati flours using Indian wheat's and produced on the stones. I would hope these will be completed at the start of 2010.

Authentic chapatti are made with what is called "atta" flour in India. This is made by sifting a stoneground wholemeal to remove the coarsest bran. If you run our Stoneground organic wholemeal through a fine sieve you will have authentic chapatti flour.

Best Chapati Flour

Hi Tom.. Just saw your post and my advice to you would be to order 'Stoneground 100% Wholemeal Flour (210)'. This reminds me of backhome Village Flour which was the pure and the best. Since being introduced to this Flour in UK I have never purchased any other type!
