All about Rye Flour

Rye is a cereal closely related to barley and wheat, it is a hardy grain. Rye is high in dietary fibres, minerals and trace minerals and other components like antioxidants.

Rye flour creates a very heavy loaf with few air bubbles, this is because rye flour has a lower gluten content than wheat. Gluten in a flour is the ingredient which reacts with the yeast to create carbon dioxide and consequently produces the air bubbles in a loaf. The gluten content is low in rye flours because the flour contains a gummy substance called pentosans which prevents fermentation of gluten. The rye bread structure is based on a complex polysaccharides which include rye starch and pentosans.

Rye flour has a higher sugar content than wheat, which makes it ferment quicker due to the yeast consuming the rye’s sugars so quickly that a long rising time does not happen. And because it ferments so easily sour dough starters are usually begun with rye flour.

Our Rye Flours

The flour is classified as light or dark according to the amount of bran left in the flour after milling. They are measured by a number code. We produce a 997 and a 1350 code. These numbers tell us the ash content in the flour. Type 997 has an ash content of 0.997-1.09% this shows a high percentage of the bran and germ has been removed. The dark rye ash content is 1.350%.
