Cake Flour
Most of us want to produce light, fluffy cakes. This requires a special flour.
Cake flour should have a low protein content and needs to be finely milled; this gives keeps things light. It should also be starch so that it can hold lots of fat and sugar.
It often comes as self-raising flour. This blended with salt and baking soda, so it leavens by itself.
