...process of germination. As germination begins the natural wheat enzymes convert the wheat carbohydrates to sugars. When the sugar levels reach exactly the correct level the maltster dries the malted wheat to caramelise the sugar which also gives a characteristic flavour to the malted wheat. After malting, the whole wheat is flaked.

How should I store my flour and how long will it keep?
