Our bread proving baskets (bannetons) are made from birchwood cane. They are used for the fermentation of the dough and forming bread loaves. Prepare the basket by dusting it with flour, then put the dough in the basket and leave to rise. This proving basket is suitable for making 500g oval loaves (length 24cm).

The basket is easy to clean. It needs to be brushed with a hard brush and washed with water. Do not use soap to clean it. When drying the basket put the basket in the oven at 130’c for 45mins, this will dry the basket and kill any possible germs and moulds. The baskets are not suitable for baking bread in the oven.

How should I store my flour and how long will it keep?

Ideally flour should be kept in a sealed container in a cool dry place with stable temperature. Typically white flour has a shelf life from milling of 12 months. Wholemeal flour will be good for 6 months. More ...
