The advanced course is a hands-on day introducing you to the basic laws of fermentation and starters (“Mother” dough). You will learn how and why to blend flours, practise wet dough development using a salt-less sponge to make an open crumb with high water absorption, and learn how to use sponges and flying sponges with natural crumb softeners.
The pace of the day will be determined by the joint experience of course members. Unless you are a very experienced home baker or artisan professional, you will get more out of this course if you have previously attended the basic course.
