Spelt and carrot muffins

Ingredients

  • 500 g peeled carrots
  • 500 g white spelt flour
  • 150 ml sunflower oil
  • 75 g 5-seed mix
  • 200 g sugar
  • 200 g white chocolate buttons
  • 3 eggs
  • 100 g mixed fruit
  • 250 ml milk or soymilk
  • 8 teaspoons baking powder
  • 1/4 teaspoon of salt
  • Preheat oven to 200°C/Gas 8/fan 180°C

Method

  1. boil or microwave the carrots until soft then mash them
  2. mix the mashed carrots with all the other ingredients
  3. fill each muffin case about 1/2 full with the mixture
  4. bake at 180°C (fan assisted oven, 200°C if yours doesn't have a fan) for 10-15 minutes until golden brown

PS. I meant to make this wheat and dairy free so used soymilk, but I forgot about the dairy in chocolate buttons and the wheat in the 5-seed mix, but if you want to make it dairy-free just use dark chocolate instead, and if it's wheat you worry about then using any of the other individual ingredients of the 5-seed mix would work.
