Norwegian Waffles

you will need :

2 free range eggs

2 tbs of sugar

3 tbs of melted butter

1 teaspoon vanilla extract

1 cup natural yogurt

1/2 cup of milk

1 1/2 cup of shipton mill self-raising flour, sieved.

Whisk the eggs and the sugar until white, pale and fluffy.

Add the melted butter. Whisk.

Add the vanilla, yogurt and milk and mix.

Add the flour, mix well.

You should end up with a thick flowing dough. Add more milk if the mixture is too stiff, more flour if it is too runny.

Place about 2 tablespoons in the waffle maker and cook.

This recipe also works in a hot frying pan, but you will need to flip over the pancake.

Excellent with crème fraîche, fruit jam or blueberries cooked in maple syrup.
